With an increasing concern for sustainable foods, mushroom production emerges as a solution for the use of agro-industrial residues, allowing the conversion of waste of low economic value into foods with nutritional interest. So the aim of this project is to contribute to the development of sustainable substrates for the production of edibles mushrooms based on the recovery of different residues from agro-industry, testing post-harvest conservation technologies, as well as develop new products according to the Circular Economy concept for “ZeroWaste”.
